This edition, Sabores Ancestrales, is a tribute to the rich culinary heritage of the Andes, reimagined in a cozy, home-like setting. As the chef personally introduces each dish, you’ll journey through flavors shaped by ancient wisdom, seasonal ingredients, and the sacred connection between food and land.

Sabores Ancestrales is more than a menu—it’s an homage to the sacred ingredients of the Andes, honoring their rich history, resilience, and deep connection to the earth.

Each dish tells a story, inspired by the flavors and techniques passed down through generations. From potatoes, the heart of Andean cuisine, to quinoa, the sacred grain of the Incas, every element is carefully crafted to evoke the spirit of a time when food was revered as a gift from nature.

Through fermentation, slow cooking, and ancestral preparations, we celebrate corn, plantains, black beans —ingredients that have sustained life in the Andes for centuries. Paired with vibrant sauces, delicate textures, and smoky undertones, these flavors transport you to the mountains, valleys, and forests of South America, where the connection between food and spirit is unbreakable.
