The word ragù comes from the French ragout and found its way into Neapolitan cuisine in the 18th century.
In Napoli , ragù is a ritual. It starts early in the morning, sometimes even the night before and cooks for 6 to 8 hours over a gentle flame. The sauce bubbles slowly, never rushing, in a rhythm so unique that Neapolitans have a word for it: “pippiare.”
It means the sauce pops and whispers as it cooks, filling the house with that deep, sweet, smoky perfume that clings to curtains, walls, and memories.
The colour shifts from bright red to deep brick as the meat releases its soul. Every home in Napoli smells of ragù on Sundays: it’s the scent of family, of waiting, of home itself.
And there’s an unspoken rule: we never have it at night, unless it’s leftovers from lunch.
