We are starting from the ground up.
Under every forest there is a network you never see. Fungi weave through the soil, wrap around roots and join one plant to the next.
Most of us in Dubai are a bit rootless. We came from somewhere else, and we are putting down roots in a city that hands you opportunity, but not an immediate community. We started The Tailwind Table to grow a different kind of root system, one made of food and conversation. Six to eight of us at one table. Strangers when we sit down, hopefully, a little more connected by the end.
Invisible, but important.
This first menu is also an homage and a thank you. Chef Bryan Kaywork was my first mentor in a professional kitchen. We connected over three things: mushrooms, Pink Floyd, and long conversations about sustainability inside a capitalist food system. He is the reason this menu is about mushrooms, clean flavors, and simplicity that shines.
A few things to know before you come. Nothing strict, just what helps the evening run smoothly and helps everyone feel at home.
1. Location and timing: The address is sent 24 hours before. Please arrive between 7:00 and 7:15 pm. We sit down at 7:15 pm and finish by about 9:30 pm. Courses are timed, so late arrivals may miss the first one.
2. Shoes: Feel free to keep them on. We just request you dust them off on the entrance mat.
3. Allergies and dietary needs: Please let me know when you book, not at the table. Mushrooms are in every course, so a mushroom allergy is the one thing I cannot work around. But I would be happy to accomodate certain other allergies and sensitivities.
4. You may sit with people you may not know. Everyone at this table came from somewhere else. We hope you enjoy the process of getting to know your fellow diners.
5. Phones and photos: Photos of the food are welcome (even encouraged). Please ask before photographing other guests.
6. Drinks: Feel free to bring your own wine or beer. A good sturdy lager or dry white wine would be perfect.
7. Dress code: Anything goes except beachwear :)
8. Be kind and curious. Kind words, good questions, and room for everyone to talk.
9. Photos and video on the night: We may take photos for T3. We will ask the people in them before we post anything.
10. Cancellations: Any cancellations follow the Splidu policy. The refunds will be directed to a splidu wallet in the timeframe mentioned on the website.
